Creamy Vegetable and “Burger” Stroganoff – Sautéed mushrooms, broccoli and carrots simmered in a creamy sauce and served over egg noodles. The “burger” is crumbled veggie burgers.

Black Bean Spaghetti – Looking for a taste of Italy? Try this delicious vegetarian treat. Delicious dish with black beans, kidney beans, capers, tomatoes, mushrooms and bell peppers.

Black Bean and Goat Cheese Enchiladas – An absolute favorite. Enchiladas stuffed with black beans, goat cheese, corn, tomatoes, onions, jalapeño peppers. Topped with enchilada sauce and cheese.
